In a study published in the Journal of the Science of Food and Agriculture in 2007, at the University of California, Davis, researchers examined the variable content of nutrients in fresh, frozen and canned vegetables and fruit. According to their findings, freshly harvested vegetables constantly contained the highest amounts of ascorbic acid in all the vegetables studied. However, the authors found that spinach stored at room temperature lost 100 percent of ascorbic acid in less than four days.
